Ingredients (For the casserole)
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 2 cloves garlic, minced
- 1/2 cup margarine
- 1/2 cup flour
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon pepper
- 4 cups chicken broth
- 1 package (10 ounces) frozen peas
- 4 cups cooked chicken
Ingredients (For the dumplings)
- 2 cups buttermilk biscuit mix
- 2 teaspoons dried basil
- 2/3 cup milk
Method
Step 1
Saute onion, celery, and garlic in margarine. Add flour, sugar, salt, basil, pepper, and broth. Bring to a boil. Cook and stir for 1 minute.
Step 2
Reduce heat. Add peas and chicken and cook for 5 minutes, stirring constantly. Pour into a greased 13x9-in. baking dish.
Step 3
Dumplings: Combine biscuit mix and basil. Stir in milk with fork until moistened. Drop 12 dumplings by teaspoon onto casserole
Step 4
Bake uncovered at 350° for 30 minutes. Cover and bake 10 minutes more until dumplings are done.
