Ingredients

  • 3 cups turnips, peeled and diced
  • 2 cups carrots, sliced
  • 1/4 teaspoon ground ginger
  • 3/4 cup water
  • 1 teaspoon salt, divided
  • 1/2 cup onion, chopped
  • 1/2 cup celery, diced
  • 3 tablespoons margarine
  • 3 tablespoons flour
  • 1/4 teaspoon pepper
  • 1-1/2 cups milk
  • 1 cup (4 ounces) shredded cheddar cheese

Method

Step 1

Mix turnips, carrots, ginger, water and 1/2 teaspoon of salt in a large saucepan. Cover and cook over medium-high heat for 10-15 minutes until vegetables are tender. Drain and reserve liquid.

Step 2

In a skillet, sauté onion and celery in margarine until tender. Stir in flour, pepper, and remaining salt. Add milk and vegetable liquid. Bring to a boil. Cook and stir until thickened and bubbly, about 10 minutes.

Step 3

Stir in cheese until melted. Stir in vegetables until heated through.
