Ingredients
- 1-1/2 tablespoons butter
- 1/4 cup olive oil
- 1/2 onion
- 1-1/2 pounds carrots
- 2 tablespoons grated or fresh ginger
- 6 cups chicken broth
Method
Step 1
Chop vegetables fine in a food processor.
Step 2
Saute carrots, ginger and onion in butter and olive oil until soft. Add about a cup of broth and put back food processor in batches to purée, or use immersion blender.
Step 3
Return to pot. Add remaining broth and seasonings. Bring to a boil. Reduce heat and simmer for 10 minutes.
This recipe is great as is, but if you want to spice it up add curry and cumin, or some fresh dill weed, or garlic, ground pepper and lime juice. You can also add a cup of lentils while cooking for a creamier texture. Top with anything from chopped green onion and jalapenos to pine nuts or a drizzle of balsamic.
