Ingredients
- 1 can (11 ounces) mandarin oranges
- 2 pounds stew meat, cut in 1-in. cubes
- 1 small onion, sliced
- 1 tablespoon oil
- 1 can (4 ounces) water chestnuts, drained
- 3 tablespoons cold water
- 1/3 cup soy sauce
- ½ teaspoon ginger
- 4 celery ribs, sliced
- 1 green pepper, sliced
- 3 tablespoons cornstarch
- hot cooked rice
Method
Step 1
Drain oranges, reserving juice. Set oranges aside.
Step 2
In dutch over, brown beef and onion in oil. Drain. Stir in water, soy sauce, ginger and reserved juice. Bring to a boil. Reduce heat, cover and simmer for 1-½ hrs. until meat is tender. Add celery, green pepper and water chestnuts. Cover and cook for 20 to 30 minutes until vegetables are tender.
Step 3
Mix cornstarch and cold water until smooth. Stir into beef mixture. Bring to a boil. Cook and stir for 2 minutes until thickened. Stir in oranges. Serve with rice.
