Ingredients

  • 3 tablespoons onion, minced
  • 1/4 cup margarine
  • 3 large baking potatoes, halved lengthwise, then sliced into 1/8 inch slices
  • salt & pepper to taste
  • 2 tablespoons Parmesan cheese, grated

Method

Step 1

Preheat oven to 500°.

Step 2

Melt margarine in a saucepan. Add onions and saute for about 3 minutes.

Step 3

Arrange potatoes in a greased 13x9-in pan with slices overlapping. Pour onion mixture over potatoes. Bake at 500° for 20 minutes.

Step 4

Remove from oven and sprinkle with Parmesan, salt and pepper. Bake for 5-7 minutes more until cheese is melted and slightly browned.
