Ingredients

  • 1 pound ground beef
  • 1/3 cup chopped onion
  • 1 can mushrooms
  • 2 cups shredded cheddar cheese, divided
  • 1 package (10 ounces) frozen broccoli, thawed
  • 2 cups Bisquick
  • 1/2 cup cold water
  • 1/2 teaspoon each salt and pepper
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese

Method

Step 1

Brown beef and onion in a skillet. Add mushrooms and cook for 3 more minutes. Put beef mixture in a greased 13x9-in. pan.

Step 2

Sprinkle 1-1/2 cups cheddar cheese over the beef mixture. Then cover with broccoli.

Step 3

In a bowl mix 1/2 cup cheddar, Bisquick, water, salt and pepper. Spread it over the broccoli. Add a little more if water necessary to make it spreadable.

Step 4

In a bowl mix eggs, milk and Parmesan. Pour over Bisquick mixture.

Step 5

Bake at 400° for 25-30 minutes.
