Ingredients
- 2 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1-1/2 cup blueberries
- 1 teaspoon grated orange peel
- 2 eggs
- 1 cup milk
- 3 tablespoons vegetable oil
- Whipped cream (optional)
Method
Step 1
Combine flour, sugar, baking powder and salt. Stir in blueberries and orange peel.
Step 2
In another bowl beat eggs, milk and oil. Stir into dry ingredients until moistened. Pour into greased 8-in. x 4-in. loaf pan. Bake at 350° for 1 hour. Cool for 10 minutes in pan before removing to a cooling rack.
Step 3
Serve with whipped cream if desired.
