Ingredients
- 4 eggs, separated
- 1-1/2 cups plus 1 tablespoon sugar
- 1/2 cup (1 stick) margarine
- 2 teaspoons vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup milk
- 3 cups blueberries with 1 tablespoon flour
Method
Step 1
Grease and flour a tube or bundt pan. Get out 4 bowls.
Step 2
Beat egg whites until stiff. Add 1/2 cup sugar and beat until thick.
Step 3
In electric mixer bowl cream margarine and 1 cup sugar. Add egg yolks and vanilla and beat until smooth.
Step 4
Sift together flour, baking powder and salt. Add alternately with milk to margarine/sugar mix. Gently fold in egg whites.
Step 5
Pour into pan. Add blueberries to top of batter. With knife swirl berries into batter. Sprinkle top with 1 tablespoon sugar. Bake at 350° for 1 hour.
Step 6
Cool for 10 minutes before removing to cooling rack.
