Ingredients

  • 1/4 cup margarine, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 2 1/2 cups blueberries

Ingredients (topping)

1/4 cup flour

1/4 cup brown sugar

1/4 cup sugar

1/2 teaspoon cinnamon

1/4 cup cold margarine (cold)

Method

Step 1

Cream margarine and sugar. Add eggs and vanilla. Mix well.

Step 2

Combine 2 cups flour, baking powder and salt. Add to creamed mixture alternately with buttermilk. Mix well.

Step 3

Toss berries into remaining flour. Fold into batter (discard flour that doesn't stick to berries). Spread batter in greased 9-in. pan.

Step 4

For topping combine flour sugars and cinnamon. Cut in margarine until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 375° for 25 to 30 minutes. Cool on wire rack.
