Ingredients

  • 1/2 cup melted shortening
  • 1 cup brown sugar or half brown and half white
  • 1 cup flour
  • 1 teaspoon baking powder
  • dash salt
  • 1 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1/2 to 3/4 cup nuts, dates or chocolate bits and nuts
  • 1/2 cup flaked coconut

Method

Step 1

Melt shortening in mixing bowl. Add sugar and beat well with a spoon. Beat eggs well and add to mixture. Add flour, baking powder, salt, and vanilla. Then fold in nuts and/or chocolate.

Step 2

Transfer to a greased 13-in. x 9-in. baking pan. Spread coconut on top. Bake at 350° for 25 to 30 minutes. Cut when cool.
