Ingredients
- 1 cup blueberries, fresh or frozen
- 1/2 cup cranberries, fresh or frozen, chopped. Dried cranberries also work ok.
- 1 cup sugar, divided
- 1 package (8 ounces) cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Ingredients (topping)
1/4 cup chopped walnuts
1/4 cup flaked coconut
2 tablespoons brown sugar
1/4 teaspoon cinnamon
Method
Step 1
Mix together blueberries, cranberries and 1/2 cup sugar. Set aside.
Step 2
In a large bowl beat cream cheese and remaining sugar until smooth. Add eggs one at a time, beating well. Beat in vanilla.
Step 3
In another bowl combine dry ingredients. Add to creamed mixture. Fold in berry mixture. Fill greased or paper lined muffin cups to 2/3 full.
Step 4
Mix topping ingredients. Sprinkle over batter.
Step 5
Bake at 400° for 18-20 minutes. Cool for 5 minutes.
