Ingredients
- 8 cups cubed peeled potatoes
- 1/4 cup margarine or butter
- 2 tablespoons flour
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1-1/2 cups milk
- 1 pound American cheese, cubed
- 1/4 cup fresh parsley, minced
Method
Step 1
Cook potatoes in water until fork tender. Drain and place in a greased 2 quart baking dish.
Step 2
In a saucepan, melt margarine. Add flour, salt and pepper, Stir to form a smooth paste. Gradually add milk, stirring constantly. Bring to a boil. Boil and stir for 1 minute. Add cheese and stir until melted. Pour over potatoes.
Step 3
Bake uncovered at 350° for 40-45 minutes until bubbly. Sprinkle with parsley before serving.
