- 1 tri tip roast, about 3 pounds
- 1/4 cup Pappy's seasoning
- 1/4 cup peppercorns, ground in a food processor or smashed with a hammer
- 2-3 tablespoons Worcestershire sauce
- 3 gloves garlic, pressed
Method
Step 1
Combine seasonings. Score meat then rub with seasoning mix. Cover and let sit in refrigerator for at least an hour or overnight. Note that pretty much any seasoning mix will work if you don't have these ingredients.
Step 2
Preheat grill. Grill for 1/2 hour fat side up, then 10-15 minutes on the other side. Or roast in oven in a baking dish with 1-inch of water, fat side up. Tent with foil, shiny side in. Roast at 425° for about 40 minutes for medium rare.
