Ingredients
- 1-1/2 cup oil
- 2 cups sugar
- 4 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 3 cups grated carrots
- 1 cup raisins
Ingredients (frosting)
1 stick margarine
8 ounces cream cheese
1 package (1 pound) confectioners’ sugar
2 teaspoons vanilla
Method
Step 1
Combine sugar, oil and eggs. Sift dry ingredients and add to sugar mixture. Beat well. Add vanilla, carrots and raisins.
Step 2
Grease pans well. Pour in batter and bake at 350° for the time corresponding to the pan size: 3 8-in. pans for 25 to 30 minutes. 2 9-in. pans for 30 to 35 minutes. 1 13-in. x 9-in. pan for 35 to 40 minutes.
Step 3
For frosting, soften margarine and cream cheese and beat together. Add confectioners' sugar and vanilla until spreading consistency. Frost cake.
