Ingredients

  • 1/4 cup margarine
  • 1/2 cup brown sugar
  • 1 can (20 ounces) sliced pineapple
  • 10-12 maraschino cherries
  • 1-1/4 cup flour
  • 1 cup sugar
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cups milk
  • 1/3 cup shortening
  • 1 egg
  • 1 teaspoon vanilla extract

Method

Step 1

In a 9-in. pan melt margarine in hot oven. Sprinkle with brown sugar. Place pineapple slices over sugar, and place a cherry in the middle of each slice.

Step 2

Mix remaining ingredients and beat for 3 minutes. Pour batter over pineapple. Bake at 350° for 40-45 minutes.

Step 3

Run a knife around edge of cake and immediately invert onto serving plate. Leave the pan on top upside down for a few minutes to let the sugar drip onto the cake.
