Ingredients
- 24 slices fresh white bread
- 24 asparagus spears
- 1/2 cup melted butter
- 2 tablespoons lemon juice
- 1-1/2 cups finely grated cheddar cheese
Method
Step 1
Place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender. Drain and pat dry.
Step 2
Remove crusts from bread and roll bread thin with a rolling pin. Place 1 asparagus spear and 2 teaspoons cheese on each. Roll thin and secure with toothpicks.
Step 3
Place in rows on a greased cookie sheet. Drizzle lemon juice and butter over each. Bake at 400° for 7-10 minutes.
