Ingredients
- 1/2 cup butter
- 1-1/4 cups sugar
- 2 eggs
- 1/2 cup milk
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2-1/2 cups blueberries
- 2 teaspoons sugar for top
Method
Step 1
On low speed, cream butter and sugar until fluffy. Add eggs one at a time and mix until blended.
Step 2
Sift dry ingredients and add alternately with milk. Mash 1/2 cup berries and fold in by hand. Add rest of berries (whole) and stir by hand.
Step 3
Grease muffin tins and top surface of muffin pan so tops don't stick as muffins rise. Pile mix high in each muffin cup. Sprinkle sugar on top. Bake at 375° for 25-30 minutes. Let cool for 30 minutes before removing.
