Ingredients

  • 1-1/2 cups flour
  • 1-1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 3/4 cup sugar
  • 1/3 cup oil
  • 3 tablespoons milk
  • 1-1/2 cups diced peeled apples
  • 1 cup chopped nuts
  • 3/4 cup coconut

Method

Step 1

Mix flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Add to dry ingredients until moistened.

Step 2

Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes.
