Ingredients

  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1 cup oil
  • 3 eggs
  • 1 small can (8 ounces) crushed pineapple, drained
  • 1 teaspoon rum extract or dark rum
  • 3 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 cup chopped pecans
  • 3/4 cup raisins

Method

Step 1

Beat together sugars, oil and eggs. Stir in pineapple and extract.

Step 2

Mix dry ingredients and stir into egg mixture until moistened. Fold in pecans and raisins. Spoon into 2 greased 8-in. x 4-in. loaf pans. Bake at 325° for 50 minutes.
