Ingredients

  • 3 cups flour
  • 1-1/2 to 2 cups sugar (use less if your bananas are very ripe)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla
  • 1 can (8 ounces) crushed pineapple, drained
  • 2 cups mashed ripe bananas
  • 1/2 cup chopped nuts, optional

Method

Step 1

Mix together flour sugar, salt, baking soda and cinnamon. In another bowl mix eggs, oil, vanilla and pineapple. Add to dry ingredients and mix until blended. Fold in bananas. Fold in nuts if desired. Transfer to 2 greased 8-in. x 4-in. loaf pans. Bake at 350° for 60-65 minutes.

Step 2

Note: to make this recipe vegan substitute 4 ounces of applesauce for the eggs. It may need to cook a few minutes longer than the normal recipe.
