Ingredients

  • 4 pork chops
  • 1 tablespoon oil
  • 1 can (8 ounces) pineapple chunks
  • 1/4 cup ketchup
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 medium green pepper, cut into chunks
  • 1 small onion, sliced
  • 1/3 cup of water mixed with 1 tablespoon cornstarch

Method

Step 1

In a skillet quickly brown chops in oil. Drain excess fat.

Step 2

Combine pineapple including juice, with ketchup, salt and pepper. Pour over chops. Stir in onion. Cover and simmer for 10 minutes.

Step 3

Stir in green pepper. Turn and baste chops. Simmer an additional 10-15 minutes or until chops are tender.

Step 4

Thicken sauce with cornstarch and water mixture.
