Ingredients
- 8 sheets phyllo dough
- 4 tablespoons butter, melted or oil
- 1 package (10 ounces) frozen spinach, thawed and squeezed dry
- 2 eggs
- 1 cup feta cheese
- 1 cup cottage cheese
- 1 small onion, finely chopped
- 2 teaspoons parsley
- Salt & pepper to taste
Method
Step 1
In a bowl mix spinach, eggs, cheeses, onion, parsley, salt and pepper.
Step 2
In a square 9-in pan, layer 4 phyllo sheets, brushing each one with butter or oil as it's layered. Fill with spinach mixture.
Step 3
Top with remaining phyllo sheets, brushing each with butter or oil as it's layered. Tuck edges of phyllo down.
Step 4
Bake uncovered at 350° for 1 hour.
This recipe freezes well. Either freeze before baking and then bake according to normal directions from frozen, or freeze baked slices wrapped in foil and reheat at 400° in foil for about 15 minutes.
