- 4 pork chops
- 1-1/3 cups Minute rice or 1 cup brown or white rice (*)
- 1 can chicken & rice soup, or any chicken soup, undiluted
- 1 cup orange juice
- 2 tablespoons oil
Method
Step 1
Brown chops in oil.
Step 2
Pour Minute rice into a glass 9x9-in baking dish. Pour orange juice on top of rice. Place chops on top of orange juice. Pour chicken soup over top of all.
Step 3
Cover dish tightly with foil and bake at 350° for 20-40 minutes depending on thickness. Remove foil and bake for 10 minutes more.
Step 4
* If you use regular (not instant) rice, it needs to cook longer than the chops. After mixing rice and orange juice cover tightly and put in the oven at 400° for about 25 minutes or longer for brown rice. Then reduce heat to 350° add chops and soup and follow the rest of the recipe.
