Ingredients

  • 3 tablespoons margarine
  • 3 tablespoons flour
  • 1-1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (14-1/2 ounces) chicken broth
  • 6 loin pork chops
  • 2 tablespoons vegetable oil
  • 6 cups peeled sliced potatoes
  • 1 medium onion, sliced

Method

Step 1

In a saucepan melt margarine. Stir in flour, salt and pepper. Add chicken broth. Cook and stir constantly until boiling. Cook for 1 minute. Remove from heat and set aside.

Step 2

Brown pork chops in oil.

Step 3

In a greased 13x9-in baking dish, layer potatoes and onions. Pour broth mixture over potatoes. Place chops on top.

Step 4

Cover and bake at 350° for 1 hour. Uncover and cook 30 minutes longer. If pork chops are thin add them halfway through cooking the potatoes.
