Ingredients
- 1/2 pound Italian sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 large carrot, chopped
- 2 cans (10-1/2 ounces each) chicken broth
- 1 can (14-1/2 ounces) diced tomatoes with liquid
- 1 cup water
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme or other seasonings
- 3/4 cup dry lentils, rinsed
Method
Step 1
In soup kettle, brown and crumble sausage. Drain.
Step 2
Add next 9 ingredients. Bring to a boil. Add lentils and season as desired. Return to a boil. Cover, reduce heat, and simmer for 60-70 minutes until lentils are tender.
