Ingredients

  • 12 slices day old bread, crusts removed & cubed
  • 1-1/2 cups cubed cooked ham
  • 1 cup chopped green pepper
  • 3/4 cup shredded Monterey jack cheese
  • 1/3 cup chopped onion
  • 7 eggs
  • 3 cups milk
  • 2 teaspoons ground mustard
  • 1 teaspoon salt

Method

Step 1

In a greased 13x9-in baking dish, layer bread cubes, ham, green pepper, cheese, and onion.

Step 2

In a bowl mix eggs, milk, mustard and salt. Pour over casserole. Cover and refrigerate overnight.

Step 3

Remove from refrigerator 30 minutes before baking. Bake uncovered at 325° for 45-50 minutes. Let stand for 5 minutes before cutting

This recipe freezes well. Wrap individual portions in foil sprayed with cooking spray and freeze. Reheat from frozen in foil at 375° for about 30 minutes.
