Ingredients
- Oil, enough to cover bottom of pot
- A few slices of salt pork, chopped
- 3-4 garlic cloves
- 4 tablespoons fresh parsley, chopped
- 1 can (32 ounces) whole tomatoes, squished with your hands, or 4-5 small cans prepared tomatoes
- 2 tablespoons sugar
- 4 tablespoons fresh basil
- 1 tablespoon oregano
- 1 scant teaspoon crushed red pepper
Method
Step 1
Heat oil in pot. Add salt pork and cook until fat is rendered.
Step 2
Add garlic and cook until golden. Remove salt pork and garlic from pan.
Step 3
Add parsley and simmer 2 minutes. Add tomatoes and stir. Add sugar and stir.
Step 4
Add basil, oregano and red pepper. Bring to a boil. Reduce heat and simmer for about an hour.
