Ingredients

  • 1 bunch broccoli chopped, or bag of frozen florets
  • 2 tablespoons oil
  • 2 garlic cloves, minced
  • 1/2 can (14 ounces) chicken broth
  • salt & pepper to taste
  • 6 ounces thin spaghetti, uncooked
  • 1/4 cup roasted peppers
  • 1/2 cup grated Parmesan cheese, divided
  • Red pepper flakes

Method

Step 1

Bring a large pot of salted water to a boil. Lower in broccoli in a strainer or steamer basket. Boil 3 minutes. Remove and reserve water. Cook pasta in boiling water for 4 to 5 minutes. Drain

Step 2

Heat oil in skillet. Add garlic. Cook until golden. Add broccoli and 1/2 can broth. Simmer 5 minutes.

Step 3

Chop peppers.

Step 4

Pour broccoli into a large bowl. Add peppers and half of cheese. Add pasta. Season with salt and pepper. Sprinkle with remaining Parmesan and hot pepper flakes.
