Ingredients
- 4 boneless chicken breasts
- 1 large mango, peeled and diced
- 3 tablespoons lime juice
- 1 tablespoon lime peel, grated
- 1/4 cup amaretto
- 1 teaspoon rosemary
- 1 cup chicken broth
- 1 tablespoon water
- 2 teaspoons cornstarch
Method
Step 1
If desired brown chicken for a few minutes on each side.
Step 2
Place 2 chicken breasts side by side in bottom of crock pot. Mix mango, lime juice, lime peel, amaretto and rosemary. Spread half over chicken. Place other chicken breasts on top and cover with remaining mango mixture. Pour broth around edges of chicken. Cook on low 3-4 hours.
Step 3
Mix water and cornstarch. Stir into cooking liquid. Cook 15 minutes until sauce has thickened.
As originally written I find the recipe to be too sweet for my taste. Adding some onion helps or it works well with leftover mango salsa from Fish Tacos
