Ingredients
- 2 cups crushed cannoli shells or graham crackers
- 6 tablespoons unsalted butter, melted
- 8 ounces mascarpone cheese, softened
- 8 ounces cream cheese, softened
- 12 ounces whole milk ricotta cheese, drained in a paper towel for 15 minutes,
- 1-1/2 cups powdered sugar
- 1-1/4 cups heavy whipping cream
- 2 teaspoons vanilla or almond extract
- 1 cup mini chocolate chips
Method
Step 1
Line muffin pans with baking cups.
Step 2
In a bowl combine crumbs and melted butter. Spoon into baking cups and press down. Chill while mixing the filling.
Step 3
Beat together cheeses with sugar. Remove to another bowl and chill.
Step 4
Beat the heavy cream with extract on high until stiff peaks form. Fold into cheese mixture, then fold in the chocolate chips.
Step 5
Spoon filling into the prepared baking cups and chill until serving, at least 1 hour.
Step 6
Can be topped with additional chips, nuts, or drizzled with chocolate.
