Ingredients

  • 8 chicken thighs
  • 8-12 hot cherry peppers with juice from the jar
  • 1 onion sliced thickly
  • garlic powder, salt & pepper to taste
  • 2 Tbsp. olive oil

Method

Step 1

Place onion slices in the bottom of a baking dish.

Step 2

Generously season chicken with salt, pepper and garlic powder. Place on top of onions and drizzle with olive oil, turning to coat. Turn chicken skin side down.

Step 3

Arrange cherry peppers in the pan and pour vinegar from the jar over the chicken so there's about 1/4" in the pan.

Step 4

Bake uncovered at 325º for about 40 minutes. Turn chicken skin side up and bake another 40-45 minutes until skin is brown and internal temperature is at least 165º.

Before baking you can add fresh spinach and a can of cannellini beans to the pan for a spicy side dish
