Ingredients

  • 1 pound dried navy pea beans or other small beans
  • 1/4 pound salt pork, diced
  • 3 medium onions, diced
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • water

Method

Step 1

Wash and sort beans. Cover 2-in. over with water and soak overnight.

Step 2

Add water if necessary. Bring beans to a gentle boil and cook for about 10 minutes, until beans are soft. Mix in remaining ingredients.

Step 3

Transfer to a 2-1/2 quart baking dish. Cover and bake all day (up to 8 hours) at 250°. Stir occasionally and add more liquid if necessary. During last 30 minutes uncover and raise oven to 350° to brown.
