Ingredients

  • 6 pounds fresh brisket
  • 2 onions, sliced
  • 1 clove garlic, minced
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup ketchup
  • fresh ground pepper
  • 2 tablespoons vegetable oil

Method

Step 1

In a pot brown meat in oil over high heat on all sides. Add and brown onion and garlic (add oil if needed).

Step 2

Add remaining ingredients and make a paste. Place roast covered with paste in roasting pan. Cover and bake at 325° for 2 hours.

Step 3

Remove, cool, slice and return to oven covered for 2 more hours.

Recipe works well with tri-tip too which is easier to find in my area than brisket. Cut the cooking time by about half.

To cut carbs you can substitute tomato paste and a few tablespoons of coconut sugar for the paste.
