Ingredients

  • 1/4 pound salt pork
  • 1/4 cup brown sugar
  • 1/3 cup molasses
  • 3/4 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 1 onion, chopped
  • 1 tablespoon ketchup
  • 1 teaspoon ground ginger
  • 1 pound dried navy beans. If you can't find navy beans, small white or pink beans will work. So will great northern beans but they're bigger so let them cook longer.
  • 8 cups of water

Method

Step 1

Clean and sort beans. Put in a pot covered with water 2-in over. Soak beans overnight. Drain, reserving water.

Step 2

Mix sugar, molasses, mustard, pepper ketchup, 2 cups of bean water, onion and salt pork in bottom of pot. Add beans, sprinkle with ginger. Add enough water to cover. Cook in slow cooker on low for 7-10 hours until beans are soft. Check every few hours and add water if necessary. Remove cover for last 1/2 hour.
