Ingredients

  • 1-1/2 pounds asparagus, cut into 2 inch pieces
  • 3 tablespoons margarine, melted
  • 1 loaf sliced bread, crusts removed
  • 3/4 cup shredded cheddar cheese, divided
  • 2 cups cubed cooked ham
  • 6 eggs
  • 3 cups milk
  • 2 teaspoons minced onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard

Method

Step 1

In saucepan, cover asparagus with water. Cover and cook until just tender but firm. Drain.

Step 2

Brush margarine over 1 side of bread slices. Place 1/2 of the bread, buttered side up in greased 13x9-in baking dish. Sprinkle with half of cheese. Layer with asparagus and ham. Cover with remaining bread.

Step 3

In a bowl lightly beat eggs. Add milk, onion, salt & mustard. Pour over bread. Cover and refrigerate overnight.

Step 4

Preheat oven to 325°. Bake for 50 minutes. Sprinkle with remaining cheese. Return to oven for 10 minutes until cheese is melted and knife comes out clean.
