Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons minced garlic
  • 1 can (2 ounces) anchovy fillets, undrained and mashed
  • 1 can (35 ounces) Italian plum tomatoes, drained and crushed
  • 1/2 cup pitted black olives, coarseley chopped
  • 1 tablespoon drained tiny capers
  • 1/4 teaspoon dried oregano
  • pinch each of crushed red pepper, salt and pepper
  • 2 tablespoons chopped fresh parsley
  • 12 oz linguine or pasta of your choice, cooked
  • Freshly grated Parmesan cheese

Method

Step 1

Mash together the oil, garlic, and anchovies in a saucepan and sauté for a few minutes until garlic is browned and anchovies are soft.

Step 2

Add tomatoes, olives, capers, oregano and red pepper flakes. Bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally until slightly thickened, about 20 minutes. Season with salt and pepper and stir in the parsley.

Step 3

Meanwhile cook pasta according to package directions and drain. Serve sauce over pasta with grated Parmesan.
